7 years and counting......

So today we have officially been hitched for 7 crazy years! Wow, who would have thought we would have made it this long, 22 years old and as green as you can possibly be fresh out of college (almost!) and with all of the ambition we could muster. I should say something romantic like it's been the most amazing time of my life, and although it has been amazing, it certainly hasn't been a typical scene out of your favorite romantic comedy. We've had our fair share of divorce threats (although none of those have reared their ugly head in at least 5 years), tears, laughter, humility, and even death. But we have made it to the other side, 7 years and 3 kids later, and are still in love, still best friends, and yes, dear bloggers, still happily married. Thank God!

And in honor of my husband I decided to indulge in a little chocolate goodness and make homemade brownies my fellow chocoholic, Jules, posted earlier today. Oh dear God were they delicious! If you love brownies, you must try the recipe, they are divine!

I did promise yesterday that I would post the Citrus Mini-muffin recipe that I made yesterday, so here it is and I assure you won't be disappointed.

Ingredients:
1 C flour
1/2 t baking powder
1/4 t baking soda
1/4 C butter, softened
2/3 C sugar
1 egg
1/2 C sour cream
1/2 t vanilla
2 t orange, lemon, or lime peel (I used orange)

Instructions:
  1. Preheat oven to 375 degrees. Lightly spray cups of a mini muffin pan (I used Pampered Chef) with nonstick cooking spray.
  2. In a medium sized bowl combine flour, baking powder, baking soda, and salt. Mix well.
  3. In a larger sized bowl whisk butter and sugar until well blended. Add egg; whisk until smooth. Mix in sour cream, vanilla and citrus peel of your choice. Add flour mixture; mix until dry ingredients are moistened (don't overmix).
  4. Using a spoon, drop a rounded scoop of batter into each muffin cup. Bake 12-13 minutes or until light golden brown. Cool in pan for 3 minutes. Remove from pan and serve warm.
Yield: 2 dozen

We've been married 5...and I can so relate to your post! They should make some reality shows on typical marriages LOL!
